By a stroke of luck I ended up in Emilia-Romagna, an Eden of fine cooking and savory ingredients. Id been living in France for nearly a decade and, while the food captivated me, each trip to Italy begged another. Growing up in the U.S, I had an idea of Italy as a European state, but now I was discovering its infinite provincial diversity. The nation has millennia of history, but its only been a unified country since 1861. Twenty individual regions weave a multicolored patchwork of provinces, cities, and villages: bygone kingdoms and feudal states.
In 2000 I landed a job as a tour guide with a company based in Forl. No idea where that was. I hefted my world atlas onto the kitchen table and thumbed through the index: F … For … Forl. Italy sculpts more of a leg than a boot on the map. Forl lies in Emilia-Romagna: a broad expanse spreading across her thigh like a garter. The region takes its name from the Via Aemilia the 160-mile ancient Roman road stretching east, straight as a tightrope from Piacenza to the Adriatic Sea.
The Apennines, Italys mountainous spine, arch east then south from the Mediterranean Sea to form the territorys lower border. Slanting vineyards and soft grassy slopes smooth north into orderly orchards. Parcels of kiwi populate the flat Po River plain. Renaissance towers, medieval ruins, and cypress spires cap rolling hills. And wavy grids of silvery olive trees garnish the slopes.
Emilia-Romagnas cultural heritage embraces Parmas powerfully arched cathedral, Bolognas leaning brick towers, and sixth-century mosaics in Ravenna; once the Western Roman Empires capital. Pellegrino Artusi, the father of Italian cooking, grew up in Forlimpopoli.
But Emilia and Romagna are one only on paper. In the eighth century, the Frankish King Pippin III pawned off the troublesome southeastern regions on the papacy. Like twins separated at birth, they matured into individual personas. Romagnoli are “chicken-farming country bumpkins,” say the “snooty, know-it-all” Emiliani.
Emilia prospered under centuries of wealthy, highborn families who maintained their prestige through lavish banquets. Parmesan cheese, balsamic vinegar, prosciutto di Parma, and bollito an opulent dish of boiled meats all hail from the region. Mortadella sausage too, even if I only knew its poor American cousin: baloney. In 1088, Europes oldest university opened in Bologna la Grassa (Fat Bologna) also Italys culinary capital.
Lucky for me, its the cradle of handmade pasta too: the centerpiece of weekly family get-togethers. Sunday mornings, Emiliana grandmothers pour mounds of flour on their table-sized cutting boards. Mixing in only eggs, they knead it into sticky yellow balls. With yard-long rolling pins, they flatten this sfoglia thin enough to see the boards wood grain. From the far edge, they curl the immense sheet into a tube, take a wide flat-bladed knife and slice off quarter-inch rounds. As the spirals unfold, classic tagliatelle emerge. The noodles rough texture will soak up a rich ragu of slowly simmered ground meats, tomato sauce, red wine, and minced aromatic vegetables.

When you think about it, the culinary community does have a lot to offer. Culinary schools in the United States and around the world offer different specialties in that field. It is more than just the executive chef preparing the entire meal.
It is a group of individuals working together who make the final product. Culinary arts careers are booming as more people watch reality food shows and want to be a chef. You can be a chef too or simply keep it as a hobby.
Culinary arts careers offer a great number of choices for culinary students who are seriously interested in joining the culinary community. Students learn each step of the kitchen by what is known as stations.
There are several different stations to be found in the kitchen, such as the meat, appetizer, sauce, vegetable and dessert stations. By working together, the line chefs are able to produce the customer’s requested meal.
Many culinary students begin work as a line chef and then quickly move forward to each different station in the hopes that they will become a sous chef someday. A sous chef is like the second in command. He or she can work each of the stations and assists the executive chef in any way.
He or she is a vital part of the chain of command and is a greatly respected part of the kitchen team. Sometimes, smaller kitchens will not have a sous chef, while larger operations may have several.
Other positions within a restaurant include people to manage the finances and business of the kitchen. These people are trained in Hospitality and Restaurant Management. Without these people the restaurant would not be a success. They interact with the customers and can call out the orders to the chef in the kitchen.
If these positions seem to be not exactly what you are after and you are not pursuing a culinary career position, then you may want to consider attending a Thai cooking school or a French cooking school class. You can still learn different techniques but without the pressure to advance the position of chef. They are great ways to add a different menu to your repertoire and dazzle your friends and family.
Culinary arts careers are not for everyone. Some people are very comfortable in their current jobs and just want to learn more skills for their hobby. There is nothing wrong with that.
Others want to seek out the challenges of the kitchen and eventually become an executive chef at a fine restaurant or resort. The most important factor is to love what you are doing and learning.

5) Your dishes, cutlery, and glasses don’t need to be in your cooking area. They can be in an cupboard area that is further from the stove and closer to where you serve from. This keeps the area around you cooking and preparation space open for items such as pots, pans, and spices.

Japanese food erasers are tiny, ultra cute erasers. I would not even think of using these to actually erase anything because they look so great. While waiting in line to check out at the grocery store, I usually ignore the outrageous news headlines of all those in Hollywood and beyond. But today, there was a special issue of People magazine, “Cook with the Stars!” Intrigued, I picked up a copy and was pleasantly surprised.
My Favorite Surprise
Eva LongoriaWhat instantly piqued my interest was a fabulous picture of Eva Longoria on the cover-with her holding a mixing bowl! I always pictured her as someone having meals prepared for her around the clock; maybe this came from her persona on the show “Desperate Housewives.” Either way, I was excited to see that she shared a love for cooking as much as I did. After reading the featured article on Eva, I learned that she grew up in a family of cooks, and they cooked with real, natural foods. This definitely can be attributed to her great figure and healthy glow. I think that we often make the assumption that women like Eva Longoria are just “lucky” and are born with great figures. But if you dig a little deeper, you will often find that they are committed to a healthy diet and fitness regimen. Keep an eye out for her first cookbook due in April, “Eva’s Kitchen: Cooking with Love for Family & Friends.” I can’t wait to get my hands on a copy!
A Chef in Progress
Another favorite feature in the issue was Grammy-winner Michael Buble’. He didn’t grow up cooking; he decided to learn once he moved out on his own. His father was a commercial fisherman, so he definitely knew how to recognize good, quality food when he tasted it. As he got the hang of cooking, he began falling in love with entertaining his friends-famous for his chicken wings or vegetable risotto. What I loved most about his article is when he said,” You don’t have to be fancy. Just use wonderful ingredients to get the best food.” So true, Michael!
My favorite recipe in this issue was Top Chef Antonia Lofaso’s Stir-fried Noodles. I love that this dish is a healthy meal for four and it’s under $10! Here is her recipe Stir-fried Noodles. Try it out and tell me what you think.
Although it is natural to feel that the stars in Hollywood are super lucky and don’t have to watch what they eat, that is simply not true. Are you regularly feeling burnout, constantly exhausted, irritable and perhaps lacking in sex drive? This may be because you’re suffering from adrenal fatigue. Often people that suffer from this condition use coffee, sugary soft drinks and other stimulants to pep themselves up during the day.
Adrenal glands are small pyramid shaped organs that sit just above each kidney in the lower back. The adrenals release their own stress hormones in response to certain situations or environmental conditions. They control the release of many important hormones in the body such as DHEA, estrogen and testosterone. The adrenal’s main function is to assist the body to deal with life-threating, or stressful situations. The adrenal responses to such situations by determining the amount of energy level available for the necessary response.
In many western cultures, due to the fast paced lifestyles that many of us live, as many as 75 percent of individuals suffer from adrenal fatigue sometime in their lives. This occurs when the adrenal glands can no longer keep up with the pace of release of stress hormones or no longer respond to repeated demands.
Symptoms may include severe fatigue, light-headedness upon standing, depression, irritability, lack of sex drive, exhaustion and general uneasiness or discomfort. This condition is often associated with intense or prolonged stress, life crisis, trauma, and chronic illness.
When your adrenals responds to stress your metabolism speeds up burning more nutrients than needed. With adrenal fatigue, the cells have used up much of your body’s nutrient stores, creating a nutritional void.
You therefore need to replenish the nutritional stores with high quality food at frequent intervals, thereby avoid low drops in blood sugar, which will make a difference to your adrenal health and energy levels.
Timing of when you eat is important if you’re suffering from adrenal fatigue. Eat before 10.00 am to restore depleted blood sugar levels from the previous night. Then eat an early lunch preferably before noon because your body will have quickly used up the morning’s nourishment. Eat a healthy snack between 2 and 3 pm to sustain yourself before the cortisol dip which typically occurs between 3 and 4 pm. And finally, your evening meal should be eaten around 5 and 6 pm and a small healthy snack before you go to bed can help you get through sleep disturbances.
Stick with low glycemic index foods as these will moderate your blood sugar levels and your insulin response. In addition low GI will also provide your body with a variety of nutrients that it needs on a daily basis. Its best to also avoid sugary products and too much caffeine if at all possible.

Every day, about 2.5 percent of people all over the world are worried about the problem of sweating too much.
